Hi Pipskid,
All of Jon Kabat-Zinn's books are highly recommended, though some find Full Catastrophe Living to be quite challenging as an entry point to mindfulness.
At the early stage, the key is finding a structured approach that will provide you with a firm grounding in the practice. Either the Finding Peace book or the Palouse online course should be able to provide that grounding.
As for your mind wandering during the body scan, that's perfectly normal. It's important to remember that mindfulness is not about self-improvement or meeting goals. If this week's meditation is more challenging than last week's, that doesn't mean you're slipping back in any way. If your mind is all over the place today, that's what's going on for you, right now. So, be with that.
Patience and self-compassion are key here.

just agreeing with what jon says.
i've used some of the palouse stuff,it's good.
i may even have put a link somewhere on site in another thread.
if you want something less involved than a book but with instructions on what to do each week then there are some course handouts here https://sites.google.com/site/mindfulraisin/interactive-session-handout you could look through.
we developed them for a course we ran for friends, then never used them as we wrote some different ones.
(we then abandoned the whole site and made new one.
)
they follow a basic 8 week mbct course but are really for use with a teacher.
feel free to browse, there may be something of use! some of the poem links don't work, but there is a separate link to them in the sidebar.
