How would I go about using mindfulness while in the gym? Should I focus mainly on my breathe and being present just like any other part of the day.
Or should I focus on the lifting of the weight and being present in the actual lift?

It's up to you really. Your breathing and the lifting of the weight are both things that are happening in the present moment. So if you you are giving your attention to either of these things and bringing it back without judgement when it goes away, then you are practising mindfulness.
It might be good for your training, to really try and focus on the exercise you are doing, the sensations generated by your muscles, the overall feeling of your body etc. Although it might be that you are already doing this. I reckon one of the reasons that people choose the hobbies that they do is because it is a time that they can escape from the incessant chatter of the mind.
